Banana Microgreen Pancakes

Ingredient
Dry
- 1 cup all-purpose flour
- 1 tsp cinnamon
- 1 tbsp baking powder
- ¼ cup flaxseeds
- Pinch of salt
Wet Ingredients
- 1 cup of plant-based milk (oat, soya)
- 1 egg
- 1 tsp vanilla extract
- 1 overripe banana (sliced)
Directions
Mix dry ingredients in a large bowl with whisk or spatula. Mix well
In a separate bowl mix wet ingredients in a medium sized bowl. Whisk milk with egg until smooth. Then add vanilla and transfer mixed wet ingredients into a large bowl with dry ingredients.
Lastly add the banana and mash into batter.
Add milk if too thick or flour if too runny.
Top with fresh berries, jams, or maple syrup
Garnish with your favorite microgreens
